Vegan Cinnamon Rolls

Sometimes only cinnamon and bread will do. I have nothing more to say other than MAKE THESE AND EAT THEM ALL!

Vegan Cinnamon Rolls
Makes 12 rolls

You will need;
For the bread roll dough
  • 1 cup almond milk
  • 1/2 cup light brown sugar
  • 1/2 Tsp salt
  • 8 Tbsp vegan margarine
  • 2 Tsp vanilla extract
  • 1/4 cup warm water
  • 1 sachet active dry yeast
  • 4 1/2 cups all-purpose flour
For the filling
  • 3/4 cup brown sugar
  • 2 Tbsp vanilla sugar (if you have it)
  • 3 Tsp ground cinnamon
  • 2 1/2 tablespoons vegan margarine, melted
  • 1 cup raisins soaked in orange juice (or brandy)
For the glaze
  • 1 cup icing sugar
  • 1 Tbsp water
  • 1 Tsp vanilla extract
  • Chopped walnuts
To Make the Dough
  1. Heat the soy milk, 1/2 cup sugar, salt, and margarine in a small saucepan over low heat until the margarine is just melted. Remove from heat and add vanilla and set aside to cool until body temperature.
  2. Then place the warm water, 1 tablespoon sugar, and yeast in a measuring jug. Stir and then set aside somewhere warm for 10 minutes. The yeast should double in size.
  3. Whisk together margarine mixture with the yeast and beat. Then add 2 1/2 cups flour, mix and then add 2 more cups of flour. Remove dough from mixing bowl and place on a lightly floured surface. The dough will be super sticky just keep kneading and resist the temptation to add loads more flour.
  4. Place dough in a large bowl greased with mild olive oil and roll around dough so it is covered in oil. Cover with a tea towel and set aside in a warm place until is has doubled in size – about 1 and a half hours.
  5. Once risen, punch in the center so that the dough deflates. Take dough out of bowl and place on a floured surface to let rest an additional 10 minutes.
To Make Filling and Assemble Rolls
  1. Grease a pan.
  2. Roll dough out on a lightly floured surface into a wide rectangle.
  3. Combine brown sugar, sugar, and cinnamon in a small bowl. Brush melted margarine evenly over surface of dough. Spread cinnamon sugar mixture over margarine and finish with raisins.
  4. With the long end towards you, roll the dough up evenly. Then using a piece of cotton or a cheese wire cut the rolls out. Then place the rolls, cut side up, into the prepared pan. Cover with tea towel and place in a warm place until they have risen, about 1 hour.
  5. Preheat oven to 190 C.
  6. Bake, uncovered, for 20 minutes. Let the rolls cool about 10 minutes before putting on the glaze.
To Make the Glaze
  1. Combine powdered sugar, vanilla and water in bowl and stir with a whisk unit smooth. Brush glaze over warm cinnamon rolls and top with chopped walnuts and any left over raisins.
  2. MUNCH!
